Zesty Mint and Lime Coleslaw

Ingredients

  • ¼ cup sliced almonds/cashew pieces
  • 2 Tbsp sesame seeds
  • 1/2 cabbage, very finely sliced
  • ¼ red onion
  • 2 large handfuls mint
  • Zest and juice of 1 lime
  • 4 Tbsp extra virgin olive oil
  • 1 Tbsp honey (optional)

Directions

  1. Brown the nuts & seeds in a fry pan on high. This only takes 2-3 mins, so take care and watch them closely so as not to over cook them! Tip them into a bowl to cool.

  2. Roughly chop or tear the mint. Finely chop the onion and the cabbage with a very sharp knife. Thin crunchy cabbage is essential for the mouth feel of this salad, so chunk the cabbage into workable pieces before slicing it to ensure you get nice thin slices.

  3. Zest then juice the lime and combine the dressing in a large salad bowl. Add all the other ingredients and mix it all well. Serve immediately and enjoy!
