Beef and Vege Curry

- 400g diced lean beef,
- 1 large onion,
- 2 cloves garlic crushed,
- 1 teaspoon each of cumin, coriander, paprika, tumeric & garam masala,
- 1 cup liquid stock,
- 1 400g (14oz) can of chick peas,
- 1 cauliflower, cut into florets
- 1 cup peas
- 1 Tbsp cornflour,
- 1 1/2 cups rice
In a large pan, wok or casserole pot brown onion & garlic with a glug of oil.
Add spices, cook 2 mins.
Add diced beef and cook on high for 2-3 minutes till browned.
Add the stock and vegetables.
Simmer for 20 mins then add corn flour dissolved in cold water, bring up the heat and stir until it thickens.
Serve hot with rice.
This hearty flavoursome meal feeds a crowd and freezes well!
